Question Extra infielder position?

A bit of a quirky rule but for an upcoming co-ed tournament (wide range of skill levels, from beginners to rec league players) you pitch to your own hitters (to speed up the game). As such, the fielding team can place their player who would normally have been the fielding pitcher, anywhere in the infield.

Where would you place him/her (apart from the obvious of course), and/or what shifts, if any, would you make?

My first thought would be to basically play a 5 man but, of course, with 4 outfielders. The problem is that you would then be very vulnerable to the swinging bunt or chop. If that becomes a problem, just move your "pitcher" back near the rubber.
